Soup. How can you resist?
Meteorologist Steve Jerve’s forecast has the temperatures dipping down to 50 this week! It’s about time. This weekend was reminiscent of the dog days of August.
I decided to make my yummy Lime Cilantro Chicken Soup to usher in the cooler weather. It’s tasty.
If you want to give it a try, here goes.
CILANTRO LIME CHICKEN SOUP
Ingredients:
2 tablespoons olive oil
1 onion, chopped
3 garlic cloves, minced*
1 tablespoon chili powder
3 boneless, skinless chicken breasts
5 to 6 cups chicken broth
1 cup frozen corn
1 cup tomatoes, seeded and chopped
1/2 bunch cilantro
1/4 cup chopped cilantro
1/4 cup fresh lime juice
sour cream
Directions:
1. Add oil to a pan over medium heat. Saute onion and garlic (*I’m liberal with the garlic, so add cloves to keep those vampires away) for 3 minutes.
2. Add chili powder and cook 1 minute. Add chicken and cook for 5 minutes.
3. Add chicken broth, corn, tomatoes and cilantro bunch. Bring to a boil.
4. Reduce heat to low. Add lime juice and chopped cilantro. Simmer for 45 minutes.
5. Remove cilantro bunch before serving. Garnish with sour cream.
Bonus time: Garlic has been shown to reduce cholesterol and help prevent cancer.
Don’t forget about tomatoes. The antioxidant lycopene in the red gems has been shown to reduce the risk of cancer and lower the risk of heart disease, atherosclerosis and macular degeneration, which can lead to blindness.
So get chopping. It’s worth the effort.

I’ve started a thread about travel agents, something of a sore spot for me since I think they are often uninformed and unwilling to look for low fares because they’re pay comes from commissions.

The Dress is back in a big way, and we couldn’t be happier.
Suddenly, “day dresses†are surpassing suits as the sophisticated go-to look for daytime.
This is great news for us in Tampa, where the ease of a dress has always made more sense than suits. Even better is the aptly-named shift , which can go from a sleeveless dress (worn alone, with bare legs) to a winter jumper (worn over long sleeves and tights or boots). What could be better when the thermometer is jumping between 90 degrees and 65 degrees in a single week?
Not only do dresses look suddenly new, after years of tight jeans and skirt sets, they’re also certainly more forgiving—many of the best styles can be worn belted or not, like this cute little Frenchi Cowl Neck Sweater dress. And the resurgence of dark tights and hose makes them easier to wear than they’ve been in years. In fact, there are so many options, most of which can go from office to evening, (like, for instance, the classic Diane Von Furstenberg wrap dress), that we know this is a trend with lots of momentum. We guarantee that you’ll see more dresses in the spring and, we suspect, next fall as well.
For us here in the subtropics, this is, (as Martha would say), a very Good Thing!

I’m feeling a little guilty today because I took a whole weekend off from running or training in any way.
But, oh, it felt good.
After work Friday night, I met some friends out for a few beers and some fun conversation. (What are you wearing for Halloween?)
I can’t remember the last time I slept in like I did on Saturday. When the cat started whining for breakfast at 9:30, I fed him and went right back to bed. I didn’t get up until noon. Until recently I worked on Saturdays, so even a lazy day doing some shopping felt like an adventure to me. A friendly poker game with friends at night was gravy. (Until I had four aces and still lost the hand to a royal flush. That’s when I realized my luck had run out.)
Sunday’s focus was just watching football with my boyfriend and not worrying about icing sore knees or feet. I’m an Eagles fan by birth, but a Bucs fan by my friends’ influence, so the game was all I could ask for—one of the most exciting endings I’ve ever seen.
I’m feeling a little guilty about not running. But really not all that much. I’ll get back on track this week.
