Few people know this, but the pig we know and love today came to North America through Tampa Bay. Yes, we have Hernando DeSoto to thank for dragging his porkers across the Atlantic Ocean so we could enjoy the crispy goodness of Porky with our breakfasts, BLTs and spinich salads.
That being said, this blog is going on record to declare 2008 as the Year of The Bacon. There will be no discussion of its merits. They stand on their own. Hell, we may even drag it into 2009, if the need becomes acute.
Toward celebrating that declaration, we’ll provide ongoing coverage of the year’s most culturally significant bacon events and trends.
With that goal in mind, we must heartily endorse this blog’s attempt to create a deep-fried bacon patty from one pound of bacon.
The fried jalapenos and Shiner Bock served with the dish were a nice touch, if a bit superfluous. Bacon stands just fine on it’s own. (Hat tip to Tony Fatso.)

Frank Lloyd Wright, eat your heart out.
