Soup. How can you resist?

Meteorologist Steve Jerve’s forecast has the temperatures dipping down to 50 this week! It’s about time. This weekend was reminiscent of the dog days of August.

I decided to make my yummy Lime Cilantro Chicken Soup to usher in the cooler weather. It’s tasty.

If you want to give it a try, here goes.

CILANTRO LIME CHICKEN SOUP

Ingredients:

2 tablespoons olive oil
1 onion, chopped
3 garlic cloves, minced*
1 tablespoon chili powder
3 boneless, skinless chicken breasts
5 to 6 cups chicken broth
1 cup frozen corn
1 cup tomatoes, seeded and chopped
1/2 bunch cilantro
1/4 cup chopped cilantro
1/4 cup fresh lime juice
sour cream

Directions:

1. Add oil to a pan over medium heat. Saute onion and garlic (*I’m liberal with the garlic, so add cloves to keep those vampires away) for 3 minutes.
2. Add chili powder and cook 1 minute. Add chicken and cook for 5 minutes.
3. Add chicken broth, corn, tomatoes and cilantro bunch. Bring to a boil.
4. Reduce heat to low. Add lime juice and chopped cilantro. Simmer for 45 minutes.
5. Remove cilantro bunch before serving. Garnish with sour cream.

Bonus time: Garlic has been shown to reduce cholesterol and help prevent cancer.

Don’t forget about tomatoes. The antioxidant lycopene in the red gems has been shown to reduce the risk of cancer and lower the risk of heart disease, atherosclerosis and macular degeneration, which can lead to blindness.

So get chopping. It’s worth the effort.
