“Taste of Home,” the magazine that highlights recipes of home cooks, has released the latest edition of its book “Everyday Slow Cooker & One Dish Recipes” cookbook. The collection has more than 300 recipes from homemakers around the country, including 18 from Florida. Tribune reader Judy Batson‘s Banana Apple Sauce is the only recipe from Tampa.
It’s nice to see a regular Recipes Lost & Found contributor getting some well-deserved recognition.
You can find Judy’s recipe on page 85 of the cookbook. “Thanks to my slow cooker, it’s a breeze to create homemade applesauce!” she’s quoted in the book as saying. “Banana, raisins and a splash of citrus flavor makes my sauce different that most.”
Prep: 20 min.
Cook: 3 hours
8 medium apples, peeled and cubed
1 medium ripe banana, thinly sliced
1 cup raisins
¾ cup orange juice
½ cup packed brown sugar
¼ cup honey
¼ cup butter, melted
2 teaspoons pumpkin pie spice
1 small lemon
1 envelope instant apples and cinnamon oatmeal
½ cup boiling waterPlace the apples, banana and raisins in a 3 qt. slow cooker lightly coated with cooking spray.
In a small bowl, combine the orange juice, brown sugar, honey, butter and pie spice; pour over the apple mixture.
Cut ends off the lemon, then cut into six wedges, remove seeds, and put into slow cooker.
Cover and cook on high for 3-4 hours or until apples are soft.
Remove and discard lemon.
Mash apple mixture.
In a small bowl, combine oatmeal and water, let stand for 1 minute. Stir into applesauce.
Yield: 5 ½ cups. Serve over ice cream, on toast, or as a side dish with pork or ham. Store in refrigerator.
